"I'm A Hypocrite"
That was Naomi Pomeroy's short answer when I asked her our caller Brian's question just now after today's meat show. Brian had called in to ask if Naomi serves fois gras at her restaurant and, if so, where she gets it from. Naomi told me that she gets it from Sonoma, California. Given Naomi's personal definition of local — that producers can easily drive to Portland in a day — Sonoma is clearly outside the local line.
But Naomi is okay with this — or maybe at peace with her internal contradictions. As she explained it, she strives to source locally but sometimes taste reigns supreme. "It's delicious," she said about fois gras. And if she has to get it from California... well, that's the way the liver fattens.
